Can I still download mods with this version? Like using nexusmods and other platforms as such. And how do I play the game on steam, how do I use the steam key?

I have a few questions :

Can I still download mods with this version? Like using nexusmods and other platforms as such.
how do I use the steam key? and does this key let me play and download the game directly from the steam app?
Will I still be able to access all new updates?

So any mods that would with Special Edition should be fine. Steam key can be added to your Steam account allowing you to download the game anytime yes.

Yes, any updates released by Steam/Bethesda will be given to you. We only supply the key, the game/content is on the publisher :)
