I've no idea where you got the idea that Photoshop and Adobe applications would not work on 10 or 11. They certainly do. You've read too much into anti-Microsoft fear mongering.
Also you can downgrade within 10 days of upgrading if it does actually break something, though I;d personally do a clean Windows install rather than downgrade myself.
